Zucchini Noodles with Chicken and Tomatoes in a Lemon Garlic Sauce

Ingredients

  • zucchini (2 large)
  • extra-virgin olive oil (2 tablespoons)
  • cherry tomatoes (12 )
  • garlic (2 cloves)
  • kosher salt (1 teaspoon)
  • Italian seasoning (1 teaspoon)
  • freshly ground black pepper (0.5 teaspoon)
  • baby spinach (4 cups)
  • cooked chicken breast (0.5 )
  • frozen peas (0.5 cup)

Instructions

  1. Cut zucchini into noodles using a spiralizer; set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add tomatoes; cook until starting to brown, 6 to 7 minutes. Add garlic; cook and stir for 30 seconds. Add zucchini noodles; season with salt, Italian seasoning, and black pepper and stir to distribute. Add spinach, chicken, peas, lemon juice, and lemon zest; drizzle with remaining 1 tablespoon olive oil. Cover and simmer until heated through, about 5 minutes.
