Zucchini Corn Fritters

Light and fluffy fritters with lots of grated zucchini and corn kernels. Fry 'em up in a hot cast iron skillet.

Ingredients

  • zucchini (2 medium)
  • corn kernels (1 cup)
  • egg (1 large)
  • all-purpose flour (0.5 cup)
  • baking powder (1 tsp)
  • salt (0.5 tsp)
  • pepper (0.25 tsp)
  • oil (2 tbsp)

Instructions

  1. Grate the zucchini and drain any excess moisture.
  2. In a bowl, combine the grated zucchini, corn, egg, flour, baking powder, salt, and pepper until mixed well.
  3. Heat oil in a cast iron skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet, flatten slightly, and fry until golden brown on both sides, about 3-4 minutes per side.
  5. Remove from skillet and drain on paper towels.
  6. Serve hot, optionally with ranch dressing.
