Zucchini Corn Fritters
Light and fluffy fritters with lots of grated zucchini and corn kernels. Fry 'em up in a hot cast iron skillet.
Ingredients
- zucchini (2 medium)
- corn kernels (1 cup)
- egg (1 large)
- all-purpose flour (0.5 cup)
- baking powder (1 tsp)
- salt (0.5 tsp)
- pepper (0.25 tsp)
- oil (2 tbsp)
Instructions
- Grate the zucchini and drain any excess moisture.
- In a bowl, combine the grated zucchini, corn, egg, flour, baking powder, salt, and pepper until mixed well.
- Heat oil in a cast iron skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet, flatten slightly, and fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from skillet and drain on paper towels.
- Serve hot, optionally with ranch dressing.
