Yellow Squash and Corn Casserole

Ingredients

  • eggs (2 large)
  • cream-style corn (1 can (11 ounce))
  • grated Parmesan cheese (0.25 cup)
  • vegetable oil (0.25 cup)
  • white sugar (2 tablespoons)
  • minced garlic (0.25 teaspoon)
  • ground black pepper (0.25 teaspoon)
  • sliced yellow squash (2 cups)
  • chopped onions (0.25 cup)
  • biscuit baking mix (0.5 cup)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan.
  2. Whisk eggs in a large bowl until smooth. Stir in cream corn, Parmesan cheese, oil, sugar, garlic, and pepper. Fold in squash, onions, and biscuit mix. Pour into prepared baking pan.
