Wagon Wheel Cookies

Delicious cookies that are rolled in confectioners' sugar for a sweet finish.

Ingredients

  • shortening (0.5 cup)
  • white sugar (2 cups)
  • eggs (4 )
  • vanilla extract (2 teaspoons)
  • all-purpose flour (2 cups)
  • unsweetened cocoa powder (1 cup)
  • baking powder (2 teaspoons)
  • salt (1 teaspoon)
  • chopped walnuts (1 cup)
  • confectioners' sugar (1 cup)

Instructions

  1. Cream together shortening and sugar in a large bowl until smooth. Beat in eggs one at a time then stir in vanilla. Combine flour, cocoa, baking powder and salt. Stir into shortening-sugar mixture. Stir in walnuts. Cover dough and chill for at least one hour.
  2. Preheat the oven to 350 degrees F (175 degrees C). Roll dough into walnut-sized balls. Roll balls in confectioners' sugar. Place cookies 2 inches apart on the cookie sheet.
  3. Bake in the preheated oven for 10 to 12 minutes until the cookies spread slightly and appear crackled on top. Cool on a baking sheet for 5 minutes before removing to a wire rack to cool completely.
