Very Easy Mushroom Barley Soup
A comforting and hearty soup full of vegetables and flavors, great for chilly days.
Ingredients
- olive oil (0.25 cup)
- chopped onion (1 cup)
- diced carrots (0.75 cup)
- chopped celery (0.5 cup)
- minced garlic (1 tsp)
- sliced fresh mushrooms (1 pound)
- chicken broth (6 cups)
- barley (0.75 cup)
- salt and pepper (0 )
Instructions
- Heat oil in a large soup pot over medium heat. Add onion, carrots, celery, and garlic; cook and stir until onion has softened and turned translucent, about 5 minutes. Stir in mushrooms and continue to cook for about 3 minutes.
- Pour in chicken broth, add barley, and bring to a boil. Reduce heat to low, cover, and simmer until barley is tender, about 40 to 50 minutes.
- Season with salt and pepper before serving.
