Vegetarian Tomato Soup
A hearty vegetarian tomato soup made with fresh vegetables and flavorful spices.
Ingredients
- vegetable oil (1 tablespoon)
- chopped onion (1 cup)
- garlic (2 cloves)
- chopped carrot (0.5 cup)
- chopped celery (0.25 cup)
- crushed tomatoes (2 cans (28 ounce))
- vegetable broth (3.5 cups)
- vegetarian Worcestershire sauce (1 tablespoon)
- salt (1 teaspoon)
- dried thyme (0.5 teaspoon)
- ground black pepper (0.5 teaspoon)
- hot pepper sauce (4 drops)
Instructions
- Heat oil in a large Dutch oven over medium-high heat. Add onion and garlic; sauté until onion is tender.
- Add carrot and celery; cook until tender, 7 to 9 minutes, stirring frequently. Stir in tomatoes, broth, Worcestershire sauce, salt, thyme, black pepper, and hot sauce; reduce heat to low. Cover Dutch oven; simmer for 20 minutes, stirring frequently.
