Vegetarian Tomato Soup

A hearty vegetarian tomato soup made with fresh vegetables and flavorful spices.

Ingredients

  • vegetable oil (1 tablespoon)
  • chopped onion (1 cup)
  • garlic (2 cloves)
  • chopped carrot (0.5 cup)
  • chopped celery (0.25 cup)
  • crushed tomatoes (2 cans (28 ounce))
  • vegetable broth (3.5 cups)
  • vegetarian Worcestershire sauce (1 tablespoon)
  • salt (1 teaspoon)
  • dried thyme (0.5 teaspoon)
  • ground black pepper (0.5 teaspoon)
  • hot pepper sauce (4 drops)

Instructions

  1. Heat oil in a large Dutch oven over medium-high heat. Add onion and garlic; sauté until onion is tender.
  2. Add carrot and celery; cook until tender, 7 to 9 minutes, stirring frequently. Stir in tomatoes, broth, Worcestershire sauce, salt, thyme, black pepper, and hot sauce; reduce heat to low. Cover Dutch oven; simmer for 20 minutes, stirring frequently.
