Vegetarian Slow Cooker Corn Chowder

A hearty and flavorful corn chowder made in a slow cooker, perfect for a comforting meal.

Ingredients

  • whole kernel corn (3 cans)
  • cream-style corn (3 cans)
  • frozen diced hash brown potatoes (1 package)
  • unsalted butter (2 tablespoons)
  • bell peppers (3 )
  • celery (3 stalks)
  • carrots (3 )
  • red onion (1 )
  • sweet white onion (1 )
  • hot cherry peppers (3 )
  • poblano peppers (2 )
  • jalapeño peppers (2 )
  • half-and-half (4 cups)

Instructions

  1. Add whole kernel corn and cream-style corn to a slow cooker; stir in hash browns.
  2. Heat butter in a skillet over medium heat. Add bell peppers, celery, carrots, red onion, white onion, cherry peppers, poblano peppers, and jalapeño peppers; cook until onions are slightly translucent, 10 to 15 minutes. Stir vegetable mixture into slow cooker; pour in half-and-half.
  3. Cover slow cooker; cook on Low for about 3 hours, stirring occasionally.
