Vegetable Quiche

A savory quiche packed with vegetables and cheese, perfect for breakfast or brunch.

Ingredients

  • green bell pepper (0.5 large)
  • minced garlic (2 teaspoons)
  • buttermilk baking mix (1 cup)
  • zucchini (1 )
  • yellow squash (1 )
  • carrot (1 )
  • shredded sharp Cheddar cheese (1 cup)
  • eggs (3 )
  • green onion (1 )
  • vegetable oil (0.25 cup)
  • salt (1 teaspoon)
  • Italian seasoning (0.75 teaspoon)
  • paprika (0.5 teaspoon)
  • red pepper flakes (0.5 teaspoon)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  2. Heat 1 teaspoon vegetable oil in a skillet over medium heat. Add onion, bell pepper, and garlic; cook and stir until just tender, about 5 minutes. Transfer mixture to a large bowl.
  3. Stir baking mix, zucchini, yellow squash, carrot, 1/2 cup Cheddar cheese, eggs, green onion, 1/4 cup vegetable oil, salt, Italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture. Spread vegetable mixture into prepared baking dish; sprinkle with remaining 1/2 cup Cheddar cheese.
  4. Bake in the preheated oven until lightly browned, about 35 minutes.
