Ultimate Chili

A hearty chili made with lean ground beef, kidney beans, and various spices, perfect for slow cooking.

Ingredients

  • lean ground beef (1 pound)
  • salt and pepper (0 )
  • dark red kidney beans (3 (15 ounce) cans)
  • Mexican-style stewed tomatoes (3 (14.5 ounce) cans)
  • celery (2 stalks)
  • red bell pepper (1 )
  • red wine vinegar (0.25 cup)
  • chili powder (2 tablespoons)
  • ground cumin (1 teaspoon)
  • dried parsley (1 teaspoon)
  • dried basil (1 teaspoon)
  • Worcestershire sauce (1 dash)
  • red wine (0.5 cup)

Instructions

  1. Cook and stir ground beef in a large skillet over medium-high heat until evenly browned, 5 to 7 minutes. Drain off grease, then season with salt and pepper.
  2. Transfer beef to a slow cooker. Add kidney beans, tomatoes, celery, bell pepper, and vinegar. Season with chili powder, cumin, parsley, basil, and Worcestershire sauce. Stir to distribute ingredients evenly.
  3. Cook on Low for 8 hours or High for 6 hours. Pour in wine during the last 2 hours.
