Turkey Gravy From Drippings

A simple and delicious turkey gravy made from drippings, perfect for your Thanksgiving feast.

Ingredients

  • turkey broth (4 cups)
  • turkey fat (0.25 cups)
  • water (0.5 cups)
  • all-purpose flour (0.25 cups)
  • salt (0 )
  • pepper (0 )
  • sage (0 )
  • cloves (0 )
  • thyme (0 )
  • mace (0 )

Instructions

  1. Heat 4 cups of turkey broth, chicken broth, or water to hot but not boiling in a saucepan.
  2. Carefully lift the cooked turkey from the roasting pan and let it rest on a cutting board. Remove fat from the pan, reserving ¼ cup.
  3. Deglaze the pan with ½ cup of water or other liquid, scraping the bottom to loosen browned bits. Pour the liquid into the saucepan with hot broth.
  4. In another saucepan, heat reserved fat over medium heat and whisk in ¼ cup flour. Cook until golden in color, stirring constantly.
  5. Whisk in the hot turkey broth and deglazed liquid, simmering until thickened (about 5 minutes).
  6. Season to taste with salt and pepper, and serve in a warm gravy boat or bowl. Optional: garnish with herbs.
