Tomato Soup Cake

A delicious and moist cake made with tomato soup, reminiscent of traditional spice cakes and banana bread.

Ingredients

  • flour (2 cups)
  • sugar (1.5 cups)
  • baking soda (1 tsp)
  • baking powder (1 tsp)
  • cinnamon (1 tsp)
  • salt (0.5 tsp)
  • egg (1 )
  • tomato soup (1 cup)
  • vegetable oil (0.5 cups)
  • raisins (0.5 cups)
  • chopped nuts (0.5 cups)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, mix together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. In a separate bowl, mix egg, tomato soup, and vegetable oil.
  4. Combine wet and dry ingredients, mixing until just incorporated. Stir in raisins and nuts if desired.
  5. Pour batter into prepared cake pan and smooth the top.
  6. Bake for about 30-35 minutes or until a toothpick comes out clean.
  7. Allow to cool and frost with cream cheese frosting if desired.
