Tomato Soup Cake
A delicious and moist cake made with tomato soup, reminiscent of traditional spice cakes and banana bread.
Ingredients
- flour (2 cups)
- sugar (1.5 cups)
- baking soda (1 tsp)
- baking powder (1 tsp)
- cinnamon (1 tsp)
- salt (0.5 tsp)
- egg (1 )
- tomato soup (1 cup)
- vegetable oil (0.5 cups)
- raisins (0.5 cups)
- chopped nuts (0.5 cups)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan.
- In a large bowl, mix together flour, sugar, baking soda, baking powder, cinnamon, and salt.
- In a separate bowl, mix egg, tomato soup, and vegetable oil.
- Combine wet and dry ingredients, mixing until just incorporated. Stir in raisins and nuts if desired.
- Pour batter into prepared cake pan and smooth the top.
- Bake for about 30-35 minutes or until a toothpick comes out clean.
- Allow to cool and frost with cream cheese frosting if desired.
