Tom Yum Kai

A delicious and aromatic Thai soup made with chicken, herbs, and spices.

Ingredients

  • water (4 cups)
  • lemongrass (1 stalk)
  • galangal (1 inch)
  • makrut lime leaves (3 )
  • fish sauce (0.25 cups)
  • chili paste (2 teaspoons)
  • fresh tomatoes (8 ounces)
  • button mushrooms (2 ounces)
  • chicken breast (1 ounce)
  • lime juice (0.25 cups)
  • fresh Thai chile peppers (2 )

Instructions

  1. Bring water to a boil in a saucepan. Add lemongrass, galangal, and makrut lime leaves; cook 1 minute.
  2. Add fish sauce; cook 1 minute.
  3. Add chili paste; reduce heat to medium. Add tomatoes; cook 2 to 3 minutes.
  4. Add mushrooms; cook 1 minute.
  5. Increase heat to high; add chicken. Cook, stirring occasionally, until chicken is cooked through, about 5 minutes.
  6. Add lime juice; stir. Add chile peppers; remove soup from heat.
