Thanksgiving Sheet Pan Meal for Two

A simplified Thanksgiving dinner for two, featuring turkey, stuffing, sweet potatoes, green beans, and pumpkin pie, all cooked on a single sheet pan.

Ingredients

  • dry stuffing mix (1 package)
  • water (1.5 cups)
  • butter (0.25 cups)
  • pecans (0.25 cups)
  • dried cranberries (2 tablespoons)
  • fresh sage (6 leaves)
  • salted butter (0.25 cups)
  • poultry seasoning (0.5 teaspoon)
  • boneless turkey breast (4 pounds)
  • fresh green beans (6 ounces)
  • balsamic vinegar (0 dashes)
  • extra virgin olive oil (0 drizzle)
  • French-fried onions (0.25 cups)
  • sweet potatoes (2 medium)
  • unsalted butter (1 tablespoon)
  • brown sugar (1 tablespoon)
  • mini marshmallows (0.25 cups)
  • pie pumpkin (1 small)
  • pumpkin pie mix (0.5 cans)
  • evaporated milk (6 tablespoons)
  • large egg (1 )
  • frozen dinner rolls (2 )
  • hot turkey gravy (0.5 cups)
  • whole berry cranberry sauce (1 can)

Instructions

  1. Preheat your oven to 375°F (175°C).
  2. Prepare an 11x17-inch sheet pan with cooking spray.
  3. Mix the stuffing mix with water according to package instructions, spread it on one side of the prepared sheet pan, then top with cubed butter.
  4. Season the boneless turkey breast with the prepared herb butter and place it next to the stuffing on the sheet pan.
  5. For the pumpkin pie, pour the prepared mixture into the hollowed out pumpkin and wrap it in aluminum foil.
  6. Place the sheet pan into the oven and cook for 30 minutes.
  7. After 30 minutes, add the green beans and scatter the pecans and cranberries over the stuffing. Return to the oven and set a timer for 15 minutes.
  8. After 45 minutes, slice each sweet potato and add the butter and brown sugar mixture. Add the sweet potatoes to the sheet pan.
  9. For the last 10 minutes, add dinner rolls to the pan and top the green beans with French-fried onions and add mini marshmallows to the sweet potatoes. Cook until the turkey is done (internal temperature of 165°F or 74°C).
  10. Once the turkey is done, remove the pumpkin to bake for another 20-25 minutes. Serve when ready.
