Texas Cowboy Stew

A hearty stew featuring a mix of ground beef, sausage, beans, and potatoes.

Ingredients

  • ground beef (2 pounds)
  • kielbasa sausage (2 pounds)
  • onion (1 medium)
  • garlic (2 cloves)
  • water (4 cups)
  • whole kernel corn (2 cans)
  • pinto beans (2 cans)
  • peeled and diced tomatoes (2 cans)
  • diced tomatoes with green chile peppers (1 can)
  • mixed vegetables (1 package)
  • baking potatoes (4 medium)
  • ground cumin (2 teaspoons)
  • chili powder (2 teaspoons)
  • salt (0 )
  • pepper (0 )

Instructions

  1. Gather all ingredients.
  2. Cook ground beef in a large skillet over medium-high heat until crumbly but not yet cooked through, about 5 minutes. Add sausage, onion, and garlic; cook and stir until meat is no longer pink and onion is translucent, 5 to 7 minutes. Drain grease.
  3. Transfer beef and sausage mixture to a large pot over medium-low heat. Add water, corn, pinto beans, diced tomatoes, diced tomatoes with chile peppers, and mixed vegetables. Stir in potatoes, cumin, chili powder, salt, and pepper.
  4. Cover and simmer, stirring occasionally, for a minimum of 1 hour; the longer it cooks, the better it gets.
