Tex-Mex Ground Beef and Potato Skillet

A hearty and flavorful Tex-Mex dish made with ground beef, potatoes, corn, and spices, served with cheese and optional sour cream.

Ingredients

  • ground beef (1 pound)
  • hash brown potatoes (2 pounds)
  • corn kernels (1 cup)
  • zucchini (1 )
  • beef broth (1 cup)
  • diced tomatoes and green chilies (1 (10 ounce) can)
  • taco seasoning (1 tablespoon)
  • ground cumin (2 teaspoons)
  • salt (0 )
  • black pepper (0 )
  • shredded Cheddar cheese (1.5 cups)
  • sour cream (0.5 cup)
  • green onions (3 )

Instructions

  1. Heat a large skillet over medium heat. Cook and stir ground beef, breaking up the pieces as it cooks, until browned and crumbly, about 3 to 5 minutes. Drain off excess fat.
  2. Add potatoes, corn, zucchini, beef broth, diced tomatoes and green chilies, taco seasoning, and ground cumin. Season with salt and pepper. Bring to a boil, cover, reduce heat, and simmer until vegetables are tender, 20 to 25 minutes. Taste and adjust seasonings.
  3. Stir in Cheddar cheese and allow to melt. Remove from heat. Garnish with dollops of sour cream and sliced green onions, and serve immediately.
