Tex-Mex Ground Beef and Potato Skillet
A hearty and flavorful Tex-Mex dish made with ground beef, potatoes, corn, and spices, served with cheese and optional sour cream.
Ingredients
- ground beef (1 pound)
- hash brown potatoes (2 pounds)
- corn kernels (1 cup)
- zucchini (1 )
- beef broth (1 cup)
- diced tomatoes and green chilies (1 (10 ounce) can)
- taco seasoning (1 tablespoon)
- ground cumin (2 teaspoons)
- salt (0 )
- black pepper (0 )
- shredded Cheddar cheese (1.5 cups)
- sour cream (0.5 cup)
- green onions (3 )
Instructions
- Heat a large skillet over medium heat. Cook and stir ground beef, breaking up the pieces as it cooks, until browned and crumbly, about 3 to 5 minutes. Drain off excess fat.
- Add potatoes, corn, zucchini, beef broth, diced tomatoes and green chilies, taco seasoning, and ground cumin. Season with salt and pepper. Bring to a boil, cover, reduce heat, and simmer until vegetables are tender, 20 to 25 minutes. Taste and adjust seasonings.
- Stir in Cheddar cheese and allow to melt. Remove from heat. Garnish with dollops of sour cream and sliced green onions, and serve immediately.
