Sweet and Savory Kale

A delicious kale dish that is both sweet and savory, perfect for a healthy meal.

Ingredients

  • olive oil (2 tablespoons)
  • onion (1 )
  • garlic (2 )
  • Dijon mustard (1 tablespoon)
  • white sugar (4 teaspoons)
  • cider vinegar (1 tablespoon)
  • chicken broth (1.5 cups)
  • kale (4 cups)
  • dried cranberries (0.25 cup)
  • salt (0 )
  • pepper (0 )
  • sliced almonds (0.25 cup)

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and garlic. Cook, stirring until onion softens and turns translucent, about 5 minutes. Add mustard, sugar, vinegar, and chicken broth. Bring to a boil over high heat. Stir in kale, cover, and cook until wilted, about 5 minutes.
  2. Add dried cranberries, and continue boiling, uncovered, until liquid reduces by about half and cranberries soften, about 15 minutes. Season to taste with salt and pepper. Sprinkle with sliced almonds before serving.
