Suzanne's Spinach Quiche
A delicious quiche filled with spinach, mushrooms, and cheese, perfect for a hearty meal.
Ingredients
- unbaked pie crust (1 whole)
- frozen chopped spinach (1 package)
- plain yogurt (1 cup)
- eggs (2 )
- all-purpose flour (1 tablespoon)
- ground black pepper (0.25 teaspoon)
- fresh mushrooms (4.5 ounces)
- shredded Cheddar cheese (4 ounces)
- chopped green onions (0.25 cup)
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Prick pie crust all over with a fork.
- Bake in the preheated oven for 5 minutes.
- Place spinach in a microwave-safe bowl; microwave until thawed. Drain as much liquid as possible; then dry spinach with paper towels until as dry as possible.
- Beat yogurt, eggs, flour, and black pepper together until combined; stir in spinach. Layer sliced mushrooms, Cheddar cheese, and chopped scallions, in that order, into pie crust; top with spinach mixture.
- Bake in the preheated oven for 15 minutes, then decrease temperature to 350 degrees F (175 degrees C); bake 30 minutes more. Cool before serving.
