Summer Squash Soup

A creamy and comforting soup loaded with summer squash and vegetables.

Ingredients

  • butter (2 tablespoons)
  • onions (2 )
  • chicken or vegetable broth (5 cups)
  • potatoes (2 )
  • carrots (2 )
  • yellow summer squash (8 cups)
  • basil (2 tablespoons)
  • salt (0 )
  • black pepper (0 )

Instructions

  1. Melt butter in a heavy pot over medium heat. Add onions; cook and stir until softened, about 5 minutes. Add chicken broth and potatoes; bring to a boil. Reduce heat to medium-low, cover pot, and simmer for about 5 minutes. Add carrots and simmer for about 10 minutes. Add summer squash and simmer until all vegetables are tender, about 15 minutes.
  2. Combine soup, basil, salt, and pepper into a blender or food processor, no more than half full. Cover and hold lid down; pulse a few times before blending. Purée in batches until desired consistency is reached.
