Spinach and Mandarin Orange Salad

Ingredients

  • red wine vinegar (125 ml)
  • white sugar (100 grams)
  • water (22.5 ml)
  • unsalted butter (22.5 grams)
  • salt (2.5 grams)
  • egg (1 )
  • Mandarin oranges (425 grams)
  • baby spinach (284 grams)
  • sliced fresh mushrooms (170 grams)
  • cooked bacon (4 strips)
  • toasted slivered almonds (50 grams)
  • red onion (25 grams)
  • croutons (15 grams)

Instructions

  1. Combine vinegar, sugar, water, butter, and salt together in a saucepan; bring to a boil. Cook and stir until sugar dissolves and mixture is bubbling, about 1 minute. Remove from heat and cool to room temperature, about 1 hour.
  2. Whisk egg into vinaigrette; return saucepan to low heat and simmer until thickens, 5 to 10 minutes.
  3. Combine Mandarin oranges, spinach, mushrooms, bacon, almonds, red onion, and croutons in a large bowl; add vinaigrette and toss to coat.
