Spicy Potatoes and Scrambled Eggs

A quick and easy dish made with seasoned potatoes and scrambled eggs, perfect for any meal.

Ingredients

  • potatoes (2 medium)
  • vegetable oil (4 tablespoons)
  • ground cumin (0.5 teaspoon)
  • ground coriander (0.5 teaspoon)
  • turmeric powder (0.5 teaspoon)
  • chili powder (0.5 teaspoon)
  • salt (0.5 teaspoon)
  • eggs (3 large)
  • salt and pepper (0 )

Instructions

  1. Gather all ingredients.
  2. Use a fork to pierce potato skins. Microwave potatoes on high until tender, 7 to 8 minutes. Let cool briefly, then peel and cut into small cubes.
  3. Heat 2 tablespoons oil in a skillet over medium-high heat. Stir in cumin, coriander, turmeric, chili powder, and 1/2 teaspoon salt, then add potatoes. Cook, stirring occasionally, until crispy and golden brown, 5 to 10 minutes.
  4. Meanwhile, heat 2 tablespoons oil in another skillet over medium-high heat. Pour eggs into the skillet; cook and stir until eggs are set, about 5 minutes. Season with salt and pepper and serve with potatoes.
