Spanish Rice

A flavorful and hearty dish made with rice, vegetables, and spices.

Ingredients

  • vegetable oil (0.25 cup)
  • instant rice (1.5 cups)
  • onion (1 )
  • green bell pepper (1 )
  • diced tomatoes (1 (16 ounce) can)
  • vegetable juice (1 (11 ounce) can)
  • tomato sauce (1 (8 ounce) can)
  • water (0.5 cup)
  • white sugar (1 tablespoon)
  • lemon juice (1 teaspoon)
  • salt (1 teaspoon)
  • ground black pepper (0.25 teaspoon)

Instructions

  1. Heat oil in a skillet over medium heat. Add rice, onion, and bell pepper; cook and stir until vegetables are slightly tender and rice is lightly browned, 7 to 10 minutes.
  2. Stir in diced tomatoes, vegetable juice, tomato sauce, water, sugar, lemon juice, salt, and black pepper; bring to a simmer, then reduce heat to medium-low, and simmer until liquid is absorbed, about 20 minutes more.
