Southern Collard Greens
A classic Southern dish featuring tender collard greens cooked with ham hocks and seasoned to perfection.
Ingredients
- water (1.5 quarts)
- ham hocks (1.5 pounds)
- collard greens (4 pounds)
- crushed red pepper flakes (0.5 teaspoon)
- vegetable oil (0.25 cup)
- salt (0 )
- pepper (0 )
Instructions
- Place the water and the ham hock in a large pot with a tight-fitting lid. Bring to a boil. Lower the heat to very low and simmer covered for 30 minutes.
- Add the collards and the hot pepper flakes to the pot. Simmer covered for about 2 hours, stirring occasionally.
- Add the vegetable oil and simmer covered for 30 minutes.
