Slow Cooker Thai Pork with Peppers

A delicious Thai-inspired dish with tender pork cooked in a flavorful sauce with peppers, perfect for a hearty meal.

Ingredients

  • chicken broth (1 cup)
  • soy sauce (0.333 cup)
  • creamy peanut butter (0.333 cup)
  • honey (3 tablespoons)
  • garlic (6 cloves)
  • fresh ginger root (2 tablespoons)
  • crushed red pepper flakes (1 teaspoon)
  • red bell peppers (2 )
  • boneless pork chops (1 pound)

Instructions

  1. Stir together chicken broth, soy sauce, peanut butter, honey, garlic, ginger, crushed red pepper flakes, and bell peppers in the bowl of a slow cooker until combined. Add pork, turning in mixture to coat. Set the cooker on Low. Cook for 5 to 6 hours until pork is tender.
  2. Remove pork from sauce. Shred pork, return to sauce. Cook until hot, and serve.
