Slow Cooker Parmesan Garlic Chicken and Potatoes

A creamy and delicious slow-cooked dish made with chicken, potatoes, and a rich Parmesan garlic sauce.

Ingredients

  • potatoes (907 grams)
  • olive oil (30 grams)
  • kosher salt (6 grams)
  • ground black pepper (2.25 grams)
  • paprika (1.5 grams)
  • chicken breasts (907 grams)
  • Parmesan garlic sauce (240 milliliters)
  • water or chicken stock (120 milliliters)
  • shredded mozzarella cheese (240 grams)
  • grated Parmesan cheese (30 grams)
  • chopped fresh parsley (15 grams)

Instructions

  1. Combine potatoes, olive oil, salt, black pepper, and paprika in the bottom of a slow cooker and stir until well coated. Add chicken pieces on top and sprinkle with remaining salt and pepper. Whisk Parmesan garlic sauce and water together in a bowl until well incorporated. Pour mixture over chicken and potatoes.
  2. Cook on High for 4 hours (or on Low for 6 hours), or until chicken is cooked through and potatoes are tender. During the last 20 minutes of cooking, add mozzarella and Parmesan and continue to cook, covered. Sprinkle with parsley to serve.
