Sloppy Joe Cornbread Casserole

A quick and easy casserole combining two fall favorites: sloppy joes and cornbread.

Ingredients

  • cornbread mix (1 bag)
  • ground beef (1 lb)
  • sloppy joe sauce (1 cup)
  • cheddar cheese (1 cup)
  • water (0.5 cup)
  • onion (0.5 cup)
  • green pepper (0.5 cup)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef with onions and green peppers until the beef is browned and the vegetables are softened.
  3. Stir in the sloppy joe sauce and simmer for about 5 minutes. If the mixture is too thick, add water to reach the desired consistency.
  4. Spread the beef mixture in the bottom of a greased baking dish.
  5. Prepare the cornbread mix according to package instructions and pour it over the beef mixture evenly.
  6. Top with shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick comes out clean from the cornbread.
  8. Let it cool for a few minutes before serving.
