Sloppy Joe Cornbread Casserole
A quick and easy casserole combining two fall favorites: sloppy joes and cornbread.
Ingredients
- cornbread mix (1 bag)
- ground beef (1 lb)
- sloppy joe sauce (1 cup)
- cheddar cheese (1 cup)
- water (0.5 cup)
- onion (0.5 cup)
- green pepper (0.5 cup)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the ground beef with onions and green peppers until the beef is browned and the vegetables are softened.
- Stir in the sloppy joe sauce and simmer for about 5 minutes. If the mixture is too thick, add water to reach the desired consistency.
- Spread the beef mixture in the bottom of a greased baking dish.
- Prepare the cornbread mix according to package instructions and pour it over the beef mixture evenly.
- Top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick comes out clean from the cornbread.
- Let it cool for a few minutes before serving.
