Simple Parsnip Pancakes

Ingredients

  • grated peeled parsnips (1 cup)
  • finely chopped onion (0.25 cup)
  • eggs (2 small)
  • olive oil (1 tablespoon)
  • salt (0.5 teaspoon)
  • dried rosemary (0.5 teaspoon)
  • ground black pepper (1 pinch)
  • sunflower oil (1 teaspoon)

Instructions

  1. Combine parsnips, onion, eggs, olive oil, salt, rosemary, and black pepper in a bowl until batter is combined and lumpy.
  2. Heat sunflower oil in a heavy skillet over medium heat. Drop batter into skillet and cook until brown and crispy on the edges, 6 to 7 minutes per side.
