Simple Chicken Parmesan

A delightful chicken parmesan recipe served with spaghetti and homemade tomato sauce.

Ingredients

  • extra-virgin olive oil (2 tablespoons)
  • garlic cloves (2 medium)
  • crushed tomatoes (1 can)
  • dried basil (0.5 teaspoon)
  • dried oregano (0.25 teaspoon)
  • sugar (0.25 teaspoon)
  • salt (0 )
  • freshly ground black pepper (0 )
  • spaghetti or linguine (8 ounces)
  • boneless, skinless chicken breasts (2 large)
  • egg (1 large)
  • dry bread crumbs (0.5 cup)
  • extra-virgin olive oil (0.25 cup)
  • grated part-skim mozzarella cheese (0.5 cup)
  • grated Parmesan cheese (0.25 cup)

Instructions

  1. To make the tomato sauce: Heat oil and garlic in a large saucepan over medium-high heat until garlic starts to sizzle. Stir in tomatoes, basil, oregano, and sugar; season with salt and pepper. Bring to a simmer; cook until sauce slightly thickens and flavors meld, 10 to 12 minutes. Cover and keep warm.
