Simple Cauliflower Soup

A creamy and delicious cauliflower soup that's easy to make and perfect for a warm meal on a chilly day.

Ingredients

  • unsalted butter (2 tablespoons)
  • onion (1 )
  • cauliflower (1 head)
  • potato (1 )
  • vegetable stock (2 cups)
  • milk (2 cups)
  • salt (0 )
  • pepper (0 )

Instructions

  1. Melt the butter in a large pot over medium heat. Saute the onion in the butter for 5 minutes. Stir in the cauliflower and potato and saute for 5 more minutes.
  2. Pour in the stock, bring to a boil, reduce heat to low and simmer for 20 minutes, or until all vegetables are tender. Add the milk, stirring well to blend. Season with salt and pepper to taste.
