Shrimp Tacos with Mango Salsa

Delicious shrimp tacos topped with a fresh mango salsa that is perfect for summer.

Ingredients

  • mango (1 )
  • ripe avocado (1 )
  • tomatoes (2 )
  • fresh cilantro (0.5 cup)
  • red onion (0.25 cup)
  • garlic (3 cloves)
  • salt (0.5 teaspoon)
  • lime juice (2 tablespoons)
  • honey butter (0.25 cup)
  • salad shrimp (1 pound)
  • flour tortillas (4 )

Instructions

  1. Toss mango, avocado, tomatoes, cilantro, onion, garlic, salt, and lime juice together in a bowl. Cover and refrigerate for 30 minutes.
  2. Melt honey butter in a skillet over medium-high heat. Add shrimp; cook and stir until pink and opaque, 2 to 3 minutes.
  3. To serve, place a few shrimp onto a warm tortilla, top with mango salsa, and fold up. Repeat with remaining ingredients.
