Shortcut Hainanese Chicken Rice
A quicker version of the classic Hainanese chicken rice dish, utilizing a rotisserie chicken for convenience yet delivering delicious flavors.
Ingredients
- jasmine rice (2 cups)
- rotisserie chicken (1 )
- chicken bouillon powder (2 tsp)
- salt (1 tsp)
- cilantro stems (10 )
- garlic (5 )
- chopped cilantro (0.5 cups)
- cucumber (1 )
Instructions
- Put the jasmine rice into your rice cooker. Throw in the chicken fat from your rotisserie chicken, chicken bouillon powder, and salt. Then pour the appropriate amount of water as per your rice cooker’s instructions.
- To enhance flavor, add 10 cilantro stems and 5 to 10 cloves of crushed or minced garlic to the rice cooker before turning it on.
- To prepare the ginger-garlic sauce, puree all ingredients in a food processor. For the ginger-scallion sauce, place sliced scallions and minced ginger in a bowl, heat oil until shimmering, and carefully pour over ginger and scallions.
- Slice the chicken and serve it alongside rice with the sauces of your choice, adding fresh cilantro and cucumber slices.
