Sheet Pan Thanksgiving Cornish Hen Dinner
A quick and easy Thanksgiving dinner for one featuring Cornish hens, potatoes, carrots, and onions, flavored with Italian seasoning and served with gravy.
Ingredients
- Cornish game hen (2 units)
- potato (2 units)
- carrot (3 units)
- onion (1 units)
- Italian seasoning (1 tbsp)
- olive oil (2 tbsp)
- salt (1 tsp)
- black pepper (1 tsp)
- chicken broth (1 cup)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare a sheet pan with a drizzle of olive oil.
- Season Cornish hens with salt, pepper, and Italian seasoning. Place the hens on the sheet pan.
- Chop potatoes, carrots, and onions into bite-sized pieces and arrange them around the hens on the sheet pan.
- Drizzle vegetables with olive oil and season with salt, pepper, and Italian seasoning. Toss to coat evenly.
- Pour chicken broth into the pan around the hens and vegetables.
- Bake in the preheated oven for 50-60 minutes or until hens reach an internal temperature of 165°F (75°C) and vegetables are tender.
- Baste the hens halfway through the cooking time with pan drippings for extra flavor.
- Once cooked, remove from the oven and let rest for 10 minutes before serving.
