Sheet Pan Thanksgiving Cornish Hen Dinner

A quick and easy Thanksgiving dinner for one featuring Cornish hens, potatoes, carrots, and onions, flavored with Italian seasoning and served with gravy.

Ingredients

  • Cornish game hen (2 units)
  • potato (2 units)
  • carrot (3 units)
  • onion (1 units)
  • Italian seasoning (1 tbsp)
  • olive oil (2 tbsp)
  • salt (1 tsp)
  • black pepper (1 tsp)
  • chicken broth (1 cup)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a sheet pan with a drizzle of olive oil.
  3. Season Cornish hens with salt, pepper, and Italian seasoning. Place the hens on the sheet pan.
  4. Chop potatoes, carrots, and onions into bite-sized pieces and arrange them around the hens on the sheet pan.
  5. Drizzle vegetables with olive oil and season with salt, pepper, and Italian seasoning. Toss to coat evenly.
  6. Pour chicken broth into the pan around the hens and vegetables.
  7. Bake in the preheated oven for 50-60 minutes or until hens reach an internal temperature of 165°F (75°C) and vegetables are tender.
  8. Baste the hens halfway through the cooking time with pan drippings for extra flavor.
  9. Once cooked, remove from the oven and let rest for 10 minutes before serving.
