Sheet Pan Summer Gnocchi
A delicious and easy-to-make sheet pan dish featuring gnocchi, fresh summer vegetables, and sausage, drizzled with pesto.
Ingredients
- gnocchi (340 grams)
- zucchini (1 item)
- summer squash (1 item)
- onion (1 small)
- cherry tomatoes (1 pint)
- chicken sausage (450 grams)
- olive oil (30 grams)
- garlic cloves (3 item)
- Italian seasoning (2 grams)
- pesto (45 grams)
Instructions
- Heat oven to 425 degrees F (220 degrees C).
- Place gnocchi, zucchini, summer squash, onion, tomatoes, and sausage on a rimmed sheet pan. Drizzle olive oil evenly over mixture. Add garlic and Italian seasoning; toss to coat.
- Bake in the preheated oven until vegetables are tender, about 35 minutes. Dollop pesto over the mixture, toss to combine, and serve immediately.
