Sheet Pan Summer Gnocchi

A delicious and easy-to-make sheet pan dish featuring gnocchi, fresh summer vegetables, and sausage, drizzled with pesto.

Ingredients

  • gnocchi (340 grams)
  • zucchini (1 item)
  • summer squash (1 item)
  • onion (1 small)
  • cherry tomatoes (1 pint)
  • chicken sausage (450 grams)
  • olive oil (30 grams)
  • garlic cloves (3 item)
  • Italian seasoning (2 grams)
  • pesto (45 grams)

Instructions

  1. Heat oven to 425 degrees F (220 degrees C).
  2. Place gnocchi, zucchini, summer squash, onion, tomatoes, and sausage on a rimmed sheet pan. Drizzle olive oil evenly over mixture. Add garlic and Italian seasoning; toss to coat.
  3. Bake in the preheated oven until vegetables are tender, about 35 minutes. Dollop pesto over the mixture, toss to combine, and serve immediately.
