Sheet Pan Chicken Breast with Feta and Vegetables

A quick and easy chicken dish baked with vegetables and feta cheese, perfect for a weeknight dinner.

Ingredients

  • vegetable oil (1 tablespoon)
  • boneless chicken breast cut into 1-inch cubes (2 pounds)
  • mini bell peppers, halved lengthwise and seeded (12 ounces)
  • white onion, quartered (1 medium)
  • Italian-style salad dressing (0.5 cup)
  • crumbled feta cheese (6 ounces)
  • dried oregano (2 teaspoons)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly oil a sheet pan.
  2. Spread chicken, peppers, and onion on a sheet pan. Sprinkle with dressing, feta, and oregano. Toss gently to combine.
  3. Bake in the preheated oven until chicken is no longer pink in the center and juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).
