Savory Thanksgiving Leftover Cupcakes

A fun way to reinvent Thanksgiving leftovers with stuffing muffins topped with mashed potatoes and turkey slices.

Ingredients

  • eggs (2 large)
  • heavy cream (1 cup)
  • salt (0.5 tsp)
  • black pepper (0.25 tsp)
  • stuffing (4 cups)
  • cranberry sauce (0.25 cup)
  • mashed potatoes (2 cups)
  • gravy (0.5 cup)
  • turkey (1 )
  • parsley (0 )

Instructions

  1. Preheat the oven to 375 degrees F. Grease a 12-cup muffin tin with cooking spray.
  2. In a large bowl, whisk together eggs, heavy cream, and salt and pepper. Stir in leftover stuffing until well combined. Set aside for 20 minutes.
  3. Scoop portions of the stuffing mixture into the muffin tin using a cookie scoop; bake for 15 minutes and allow to cool. In the meantime, reheat leftover mashed potatoes, gravy, and turkey slices.
  4. Using a small knife or melon baller, cut a small hole out of the top of each cupcake and set aside. Drop a teaspoon of cranberry sauce into each hole and top with the cut section.
  5. Transfer mashed potatoes to a piping bag and pipe onto the top of each cupcake. Stick two (1-inch) slices of turkey into the top of each cupcake. Drizzle gravy overtop, and garnish with chopped parsley.
