Salad Stuffed Shells

A delicious dish featuring jumbo pasta shells stuffed with a fresh salad mix, perfect for a light meal or appetizer.

Ingredients

  • jumbo pasta shells (18 pieces)
  • chopped romaine lettuce (4 cups)
  • chopped Roma tomatoes (1 cup)
  • thinly sliced salami (0.5 pound)
  • seeded and chopped cucumber (0.75 cup)
  • chopped red onion (0.75 cup)
  • balsamic dressing (0.5 cup)
  • shredded Parmesan cheese (1 cup)

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta shells, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain and rinse with cold water until cold.
  2. Combine lettuce, tomatoes, salami, cucumber, and red onion in a large bowl. Add dressing and toss to coat. Stuff pasta shells with salad mixture and sprinkle with Parmesan cheese.
