Salad Stuffed Shells
A delicious dish featuring jumbo pasta shells stuffed with a fresh salad mix, perfect for a light meal or appetizer.
Ingredients
- jumbo pasta shells (18 pieces)
- chopped romaine lettuce (4 cups)
- chopped Roma tomatoes (1 cup)
- thinly sliced salami (0.5 pound)
- seeded and chopped cucumber (0.75 cup)
- chopped red onion (0.75 cup)
- balsamic dressing (0.5 cup)
- shredded Parmesan cheese (1 cup)
Instructions
- Bring a large pot of lightly salted water to a boil. Cook pasta shells, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain and rinse with cold water until cold.
- Combine lettuce, tomatoes, salami, cucumber, and red onion in a large bowl. Add dressing and toss to coat. Stuff pasta shells with salad mixture and sprinkle with Parmesan cheese.
