Rosemary Potatoes with Roasted Heads of Garlic

A delicious roasted potatoes dish infused with garlic and fresh rosemary, perfect as a side for any meal.

Ingredients

  • new red potatoes (4 pounds)
  • garlic (2 large heads)
  • unsalted butter (0.5 cup)
  • fresh rosemary (3 sprigs)
  • dry white wine (1 cup)
  • extra-virgin olive oil (0.5 cup)

  • ground black pepper (0 )

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Arrange potatoes in a large roasting pan; nestle garlic, cut-sides up, among potatoes. Dot potatoes and garlic with butter; sprinkle with rosemary. Drizzle wine and olive oil over top; season with salt and black pepper.
  3. Bake in the preheated oven until potatoes are golden and crisp and garlic is soft when squeezed, about 45 minutes.
