Roasted Roma Tomatoes

A simple and delicious recipe for roasted Roma tomatoes with herbs and feta cheese.

Ingredients

  • Roma (plum) tomatoes (8 item)
  • extra-virgin olive oil (0.25 cup)
  • chopped garlic (2 tablespoons)
  • chopped fresh parsley (1 teaspoon)
  • chopped fresh basil (1 teaspoon)
  • chopped fresh oregano (1 teaspoon)
  • salt and black pepper (0 )
  • crumbled feta cheese (0.5 cup)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Mix together tomatoes, olive oil, garlic, parsley, basil, oregano, salt, and pepper in a large bowl, working the seasonings into cavities of tomatoes. Place tomatoes, cut-sides up, on a baking sheet. Sprinkle each tomato with about 1 tablespoon feta cheese.
  3. Bake in the preheated oven until tomatoes are cooked but still firm, about 15 minutes.
