Ricotta Cookies

Ingredients

  • ricotta cheese (425 grams)
  • white sugar (350 grams)
  • butter (226 grams)
  • eggs (2 )
  • vanilla extract (30 milliliters)
  • all-purpose flour (480 grams)
  • baking powder (5 grams)
  • baking soda (5 grams)
  • confectioners' sugar (180 grams)
  • milk (75 milliliters)
  • almond extract (5 grams)
  • colored candy sprinkles (40 grams)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease or line cookie sheets.
  2. In a large bowl, combine ricotta, sugar, butter, eggs, and vanilla extract. Beat with an electric mixer until smooth and creamy.
  3. In another bowl, combine flour, baking powder, and baking soda. Gradually blend into the ricotta mixture, mixing in additional flour if needed to form a workable dough.
  4. Roll the dough into walnut-sized balls and place them 2 inches apart on prepared cookie sheets.
  5. Bake in the preheated oven until edges are golden, about 8 to 10 minutes.
  6. To make the glaze: Mix confectioners' sugar, milk, and almond extract together until smooth. Spoon over warm cookies, and sprinkle with colored candy sprinkles.
