Ricotta Cookies

Ingredients
- ricotta cheese (425 grams)
- white sugar (350 grams)
- butter (226 grams)
- eggs (2 )
- vanilla extract (30 milliliters)
- all-purpose flour (480 grams)
- baking powder (5 grams)
- baking soda (5 grams)
- confectioners' sugar (180 grams)
- milk (75 milliliters)
- almond extract (5 grams)
- colored candy sprinkles (40 grams)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease or line cookie sheets.
- In a large bowl, combine ricotta, sugar, butter, eggs, and vanilla extract. Beat with an electric mixer until smooth and creamy.
- In another bowl, combine flour, baking powder, and baking soda. Gradually blend into the ricotta mixture, mixing in additional flour if needed to form a workable dough.
- Roll the dough into walnut-sized balls and place them 2 inches apart on prepared cookie sheets.
- Bake in the preheated oven until edges are golden, about 8 to 10 minutes.
- To make the glaze: Mix confectioners' sugar, milk, and almond extract together until smooth. Spoon over warm cookies, and sprinkle with colored candy sprinkles.
