Ramen Vegetable Stir Fry

A quick and healthy stir fry featuring ramen noodles and a variety of vegetables in a flavorful sauce.

Ingredients

  • low-sodium soy sauce (0.5 cup)
  • lime juice (2 tablespoons)
  • sweet Thai chili sauce (2 tablespoons)
  • maple syrup (1 tablespoon)
  • ground ginger (0.25 teaspoon)
  • red pepper flakes (0.125 teaspoon)
  • ramen noodles (6 ounces)
  • sesame oil (2 tablespoons)
  • garlic (2 cloves)
  • onion (0.5 cup)
  • red pepper (0.5 cup)
  • broccoli florets (2.5 cups)
  • sugar snap peas (4 ounces)

Instructions

  1. Combine soy sauce, lime juice, Thai chili sauce, maple syrup, ginger, and red pepper flakes in a small bowl. Stir until smooth; set aside.
  2. Bring 4 cups of water to a boil in a pot. Discard flavor packet. Add ramen noodles to boiling water; cook until noodles are tender, 4 to 5 minutes. Drain noodles and set aside.
  3. Heat sesame oil in a skillet over medium-high heat. Add garlic, onions, red peppers, broccoli, and sugar snap peas, and cook and stir until softened, about 5 minutes. Reduce heat to low; stir in sauce, and cook until thickened, about 3 minutes. Add in ramen noodles and serve warm.
