Rachel's Tomato Basil Soup
A creamy and delicious tomato basil soup that's perfect for any occasion.
Ingredients
- crushed tomatoes (794 grams)
- chicken broth (411 grams)
- tomato-vegetable juice cocktail (326 grams)
- fresh basil leaves (20 grams)
- heavy cream (240 milliliters)
- unsalted butter or margarine (60 grams)
Instructions
- Combine tomatoes, chicken broth, and vegetable juice in a large saucepan; bring to a boil and cook for 30 minutes. Remove from heat; stir in basil. Purée soup with an immersion blender until smooth, if desired.
- Stir in cream and butter; return soup to medium-low heat. Stir until butter is melted. Serve immediately.
