Rachel's Tomato Basil Soup

A creamy and delicious tomato basil soup that's perfect for any occasion.

Ingredients

  • crushed tomatoes (794 grams)
  • chicken broth (411 grams)
  • tomato-vegetable juice cocktail (326 grams)
  • fresh basil leaves (20 grams)
  • heavy cream (240 milliliters)
  • unsalted butter or margarine (60 grams)

Instructions

  1. Combine tomatoes, chicken broth, and vegetable juice in a large saucepan; bring to a boil and cook for 30 minutes. Remove from heat; stir in basil. Purée soup with an immersion blender until smooth, if desired.
  2. Stir in cream and butter; return soup to medium-low heat. Stir until butter is melted. Serve immediately.
