Quick and Easy Vegetable Curry

A flavorful and simple vegetable curry that can be made in under an hour, perfect for a quick dinner.

Ingredients

  • olive oil (1 tablespoon)
  • onion (1 )
  • garlic (2 cloves)
  • curry powder (2.5 tablespoons)
  • tomato paste (2 tablespoons)
  • diced tomatoes (1 (14.5 ounce) can)
  • vegetable bouillon (1 cube)
  • mixed vegetables (1 (10 ounce) package)
  • water (1.5 cups)
  • salt (0 )
  • pepper (0 )
  • cilantro (2 tablespoons)

Instructions

  1. In a large saucepan over medium-high, heat oil and sauté onion and garlic until golden. Stir in curry powder and tomato paste, cook 2 to 3 minutes.
  2. Stir in tomatoes, vegetable bouillon cube, mixed vegetables, water, salt and pepper to taste. Cook approximately 30 minutes until vegetables are well done (not crunchy). Sprinkle with fresh cilantro prior to serving.
