Punjabi Sukha Urad Dal

A delicious and hearty Indian dish made with black lentils, spices, and garnished with fresh cilantro.

Ingredients

  • black lentils (urad dal) (1 cup)
  • water (0 )
  • vegetable oil (2 tablespoons)
  • onion (1 )
  • green chile peppers (4 )
  • garlic (4 cloves)
  • ginger root (1 tablespoon)
  • salt (0 )
  • tomato (1 )
  • garam masala (1 teaspoon)
  • ground turmeric (0.5 teaspoon)
  • cilantro (0.25 cup)

Instructions

  1. Place lentils in a large container and cover with several inches of cool water. Let soak for 4 hours or overnight. Drain and rinse.
  2. Heat oil in a heavy-bottomed saucepan over medium heat. Add onion, chile peppers, garlic, and ginger. Cook until onions are golden brown, about 5 minutes.
  3. Stir lentils and 1 cup water into onion-chile mixture. Season with salt. Reduce heat to low and simmer until lentils are mostly cooked, about 30 minutes.
  4. Add tomato, garam masala, and turmeric. Cook until lentils are tender, about 10 minutes more.
  5. Garnish with cilantro, and serve.
