Pumpkin Muffins with Streusel Topping

Ingredients

  • fresh pumpkin (1 cup)
  • oatmeal (3 cup)
  • brown sugar (0.5 cup)
  • flour (1.5 cup)
  • baking powder (1 tsp)
  • salt (0.5 tsp)
  • eggs (2 )
  • milk (0.5 cup)
  • sugar (0.5 cup)
  • cinnamon (1 tsp)
  • nutmeg (0.25 tsp)
  • butter (0.5 cup)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine fresh pumpkin, milk, melted butter, and sugar. Mix until smooth.
  3. In another bowl, mix flour, oatmeal, salt, baking powder, nutmeg, and cinnamon.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Fill muffin tins with batter and add a streusel topping if desired.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
