Pumpkin Muffins with Streusel Topping

Ingredients
- fresh pumpkin (1 cup)
- oatmeal (3 cup)
- brown sugar (0.5 cup)
- flour (1.5 cup)
- baking powder (1 tsp)
- salt (0.5 tsp)
- eggs (2 )
- milk (0.5 cup)
- sugar (0.5 cup)
- cinnamon (1 tsp)
- nutmeg (0.25 tsp)
- butter (0.5 cup)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine fresh pumpkin, milk, melted butter, and sugar. Mix until smooth.
- In another bowl, mix flour, oatmeal, salt, baking powder, nutmeg, and cinnamon.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Fill muffin tins with batter and add a streusel topping if desired.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
