Pumpkin French Toast

A delicious twist on traditional French toast using pumpkin puree and spices.

Ingredients

  • eggs (4 )
  • canned pumpkin puree (0.25 cup)
  • ground cinnamon (1 teaspoon)
  • ground nutmeg (1 pinch)
  • whole wheat bread (8 slices)
  • butter (2 teaspoons)

Instructions

  1. Beat eggs, pumpkin puree, cinnamon, and nutmeg together in a bowl. Dip bread slices into the pumpkin mixture until coated on both sides.
  2. Melt 1 teaspoon butter in a large skillet over medium-high heat. Place 4 bread slices into the skillet and cook until browned on both sides, about 3 minutes per side. Repeat with remaining bread and butter.
