Portuguese Bean Soup

A hearty and flavorful soup packed with beans, vegetables, and meats, perfect for a crowd.

Ingredients

  • water (2 quarts)
  • ham hock (1 )
  • linguiça sausage (1 )
  • onion (1 )
  • potatoes (4 )
  • celery (2 )
  • carrots (2 )
  • stewed tomatoes (1 )
  • tomato sauce (1 )
  • garlic (1 )
  • kidney beans (1 )
  • cabbage (0.5 head)

Instructions

  1. Place water, ham hock, linguiça, and onion in a Dutch oven over high heat; bring to a boil. Reduce heat to medium-low, cover, and simmer for 1 hour.
  2. Remove meat from ham hock, chop, and return to soup. Stir in potatoes, celery, carrots, stewed tomatoes, tomato sauce, and garlic. Cover; simmer for 1 1/2 hours, stirring occasionally.
  3. Stir in kidney beans and cabbage; cook until cabbage has softened, about 10 minutes.
