Polish Chili
A hearty chili made with ground beef, Polish sausage, and a variety of peppers, perfect for feeding a crowd.
Ingredients
- ground beef (2 pounds)
- Polish sausage (1 pound)
- onion (1 )
- garlic (3 )
- Anaheim chilies (4 )
- yellow wax peppers (3 )
- jalapeño peppers (3 )
- tomatoes (4 )
- tomatillos (4 )
- distilled white vinegar (0.5 cup)
- tomato sauce (0.25 cup)
- chopped pimentos (1 (4 ounce) jar)
- pinto beans (1 (15 ounce) can)
- kidney beans (1 (15 ounce) can)
Instructions
- Place ground beef into a large pot over medium-high heat. Break meat up while cooking until no longer pink. Drain off excess grease, leaving just enough to coat the bottom of the pot.
- Add Polish sausage, onion, garlic, Anaheim chilies, yellow peppers, jalapeño peppers, tomatoes, and tomatillos. Stir to combine. Simmer over medium heat until mixture softens, about 20 minutes.
- Add vinegar, tomato sauce, pimentos, pinto beans, and kidney beans. Cover and simmer over medium heat until flavors meld, about 30 minutes.
