Polish Chili

A hearty chili made with ground beef, Polish sausage, and a variety of peppers, perfect for feeding a crowd.

Ingredients

  • ground beef (2 pounds)
  • Polish sausage (1 pound)
  • onion (1 )
  • garlic (3 )
  • Anaheim chilies (4 )
  • yellow wax peppers (3 )
  • jalapeño peppers (3 )
  • tomatoes (4 )
  • tomatillos (4 )
  • distilled white vinegar (0.5 cup)
  • tomato sauce (0.25 cup)
  • chopped pimentos (1 (4 ounce) jar)
  • pinto beans (1 (15 ounce) can)
  • kidney beans (1 (15 ounce) can)

Instructions

  1. Place ground beef into a large pot over medium-high heat. Break meat up while cooking until no longer pink. Drain off excess grease, leaving just enough to coat the bottom of the pot.
  2. Add Polish sausage, onion, garlic, Anaheim chilies, yellow peppers, jalapeño peppers, tomatoes, and tomatillos. Stir to combine. Simmer over medium heat until mixture softens, about 20 minutes.
  3. Add vinegar, tomato sauce, pimentos, pinto beans, and kidney beans. Cover and simmer over medium heat until flavors meld, about 30 minutes.
