Pineapple Upside-Down Cake

A delicious and moist upside-down cake topped with pineapple and cherries, perfect for any occasion.

Ingredients

  • cooking spray (0 )
  • DOLE® Pineapple Slices (1 (20 ounce) can)
  • packed brown sugar (0.25 cup)
  • margarine (2 tablespoons)
  • maraschino cherries (8 )
  • yellow cake mix (1 (9 ounce) package)
  • cold water (0.5 cup)
  • egg (1 large)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch pan with cooking spray.
  2. Drain pineapple slices; set aside.
  3. Stir together brown sugar and melted margarine in the prepared pan; spread evenly in the bottom of the pan. Place pineapple slices into brown sugar mixture. Place a cherry into the center of each pineapple slice and into the center of the pan.
  4. Beat together cake mix, cold water, and egg in a large bowl with an electric mixer on low speed for 30 seconds. Beat on medium speed for 3 to 4 more minutes. Pour batter evenly over pineapple and cherries in the pan.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool in the pan for 5 minutes. Loosen edges and turn out onto a serving platter.
