Pancit
A delicious Filipino rice noodle dish that combines flavors of tender meats and fresh vegetables.
Ingredients
- thin rice noodles (1 package)
- skinless, boneless chicken legs (8 ounces)
- pork tenderloin (8 ounces)
- soy sauce (0.5 cup)
- ground black pepper (0 )
- cabbage (0.5 medium head)
- carrots (2 )
- shrimp (8 ounces)
- green onions (2 )
Instructions
- Place rice noodles in a large bowl and cover with warm water. Set aside until noodles are softened; cut into 4-inch lengths. Drain and set aside.
- Brown chicken and pork in a skillet over medium heat until no pink shows; season with soy sauce and black pepper. Remove from skillet and set aside. Sauté cabbage and carrots in same skillet until tender. Stir in noodles, shrimp, and green onions; cook for 4 to 5 minutes. Stir in chicken and pork; cook 5 minutes more.
