Pancit

Ingredients

  • thin rice noodles (1 package)
  • skinless, boneless chicken legs (8 ounces)
  • pork tenderloin (8 ounces)
  • soy sauce (0.5 cup)
  • ground black pepper (0 )
  • cabbage (0.5 medium head)
  • carrots (2 )
  • shrimp (8 ounces)
  • green onions (2 )

Instructions

  1. Place rice noodles in a large bowl and cover with warm water. Set aside until noodles are softened; cut into 4-inch lengths. Drain and set aside.
  2. Brown chicken and pork in a skillet over medium heat until no pink shows; season with soy sauce and black pepper. Remove from skillet and set aside. Sauté cabbage and carrots in same skillet until tender. Stir in noodles, shrimp, and green onions; cook for 4 to 5 minutes. Stir in chicken and pork; cook 5 minutes more.
