Pan Fried Crookneck Squash

Ingredients

  • canola oil (3 tablespoons)
  • crookneck squash (3 large)
  • salt (0 )
  • cornmeal (0.5 cup)

Instructions

  1. Add enough canola oil to cover the bottom of a large skillet; heat over medium to medium-high heat.
  2. Slice squash. Sprinkle slices with salt; roll in cornmeal to coat.
  3. Fry squash in oil for 5 minutes without turning. Flip; continue to fry, flipping occasionally, until crispy and golden brown on both sides, 10 to 15 minutes more. Serve immediately.
